Baked Squash with Orange

Butternut squash is brushed with olive oil, seasoned with sea salt and fresh ground black pepper, and topped with mixture of chopped fresh parsley, orange zest, orange juice and crushed garlic. Dish is covered and placed in hot oven for 45 minutes. Served hot.

Ingredients -
3 tablespoons Chopped Fresh Parsley
2 Fresh Oranges, zested and juiced
2 Garlic Cloves, crushed
1 Medium Butternut Squash, peeled and deseeded
1 tablespoon Extra-Virgin Olive Oil
Sea Salt, to taste
Fresh Ground Black Pepper, to taste
 
Preparation:

1. Preheat the oven to 400 degrees.

2. Mix the parsley, orange zest and garlic in the orange juice.

3. Cut the squash into 1/2 inch slices and brush with the olive oil.

4. Place the squash in an ovenproof dish and season to taste with salt and pepper.

5. Spoon the orange mix over the squash and cover with foil.

6. Bake for 40-45 minutes until the squash is slightly soft.

7. Serve with crusty bread rolls.
