Butternut Apple Crisp

Butternut squash prepped and cut into thin slices. Squash is tossed with sliced tart apple, corn syrup, fresh lemon juice, and mixture of brown sugar, cornstarch, ground cinnamon, and sea salt. Squash mixture is transferred to prepared baking dish and roasted in hot oven for 20 minutes. Topping prepared from brown sugar, quick-cooking oats, all-purpose flour, and butter. Topping is sprinkled over squash and dish is returned to oven until squash and apple are soft. Served warm.

Ingredients -
1 Small Butternut Squash (about 1 pound)
3 Medium Tart Apples, peeled and sliced
1/4 cup Corn Syrup
2 tablespoons Fresh Lemon Juice
3/4 cup Brown Sugar, packed
1 tablespoon Cornstarch
1 teaspoon Ground Cinnamon
1/2 teaspoon Sea Salt

Oat Topping:
1/2 cup All-Purpose Flour
1/2 cup Quick-Cooking Oats
1/4 cup Brown Sugar, packed
6 tablespoons Cold Butter

Vanilla Ice Cream (optional)
 
Preparation:

1. Preheat the oven to 375 degrees.

2. Clean and peel the squash.

3. Cut each squash in half lengthwise.

4. Remove the seeds and rib and discard.

5. Cut the squash into thin slices.

6. Combine the lemon juice, corn syrup, squash and apples in a large mixing bowl.

7. Toss thoroughly to coat.

8. In a small bowl, combine the brown sugar, cornstarch, cinnamon, and salt.

9. Stir this into the squash.

10. Lightly grease a 13 x 9 inch baking dish with nonstick cooking spray.

11. Transfer the mixture to the prepared dish.

12. Cover and bake for 20 minutes.

13. Combine the brown sugar, oats and flour in a small bowl.

14. Cut in the butter until the mixture resembles coarse crumbs.

15. Sprinkle the crumbs evenly over the squash.

16. Bake for 25 longer or until the squash and the apples are tender and the topping is lightly browned.

17. Serve warm with ice cream if desired.
