Butternut Apple Pie Crisp

Pie filling prepared from brown sugar, ground cinnamon, coarse salt, thinly sliced butternut squash, prepared apple pie filling, and fresh lemon juice. Filling spread evenly into prepared baking dish, covered, and baked in hot oven for 30 minutes. Topping prepared from all-purpose flour, quick cooking oats, and butter. Mixture is sprinkled over pie filling and pie is baked until topping is golden brown and squash is fork tender.

Ingredients -
3/4 cup Packed Brown Sugar, divided
1 teaspoon Ground Cinnamon
1/2 teaspoon Coarse Salt
2 pounds Butternut Squash, peeled, seeded, and thinly sliced (about 4 cups)
1 (21 ounces) can Apple Pie Filling
2 tablespoons Fresh Lemon Juice
1/2 cup All-Purpose Flour
1/2 cup Quick-Cooking Oats
6 tablespoons Cold Butter, cubed
 
Preparation:

1. Preheat the oven to 350 degrees.

2. Combine 1/2 cup brown sugar, salt and cinnamon in a large mixing bowl.

3. Add the pie filling, lemon juice and squash to the bowl.

4. Mix well.

5. Grease a 9 inch square baking dish with nonstick cooking spray.

6. Pour the mixture into the prepared dish.

7. Cover and bake for 30 minutes.

8. Combine the oats, remaining brown sugar and flour in a small bowl.

9. Cut in the butter until the mixture resembles coarse crumbs.

10. Sprinkle the crumbs over the squash mixture.

11. Bake uncovered for 45-50 minutes longer or until the topping is golden brown and the squash is fork tender.
