Butternut Squash Bread

Yeast activated and added to bowl with mashed butternut squash, warm whole milk, beaten eggs, unsalted butter, white sugar and coarse salt. All-purpose flour gradually incorporated into squash mixture. Dough is kneaded and set aside to rise. Prepared dough is transferred into loaf pans and allowed to rise again. Dough is baked in hot oven until tops are golden brown.

Ingredients -
2 (1.25 ounces each) packages Active Dry Yeast
1/2 cup Warm Water
1-1/4 cup Butternut Squash, cooked and mashed
1 cup Warm Whole Milk
2 Eggs, beaten
1/3 cup Unsalted Butter, melted
1/3 cup White Sugar
1 teaspoon Coarse Salt
7 cups All-Purpose Flour, more if needed
 
Preparation:

1. Dissolve the yeast in a mixing bowl with the water.

2. Let stand for 5 minutes.

3. Add the squash, milk, eggs, butter, sugar and salt.

4. Mix well.

5. Gradually add 3-1/2 cups flour and beat until the mixture is smooth.

6. Add enough remaining flour to form a soft dough.

7. Turn onto a floured board and knead until the dough is smooth and elastic which takes about 6-8 minutes.

8. Place the dough in a greased bowl, turning once to grease top.

9. Cover and let rise in a warm place until doubled which takes about 1 hour.

10. Punch the dough down.

11. Shape it into three loaves.

12. Place the loaves into greased 8x4x2 loaf pans.

13. Cover and let rise until doubled which takes about 30 min.

14. Bake at 375 degrees for 25-30 minutes or until the tops are golden brown.

15. Remove the loaves from the pans to cool on wire racks.
