Butternut Squash Casserole

Mixture of mashed butternut squash, white sugar, melted butter, crushed pineapple, ground cinnamon, vanilla extract, and ground nutmeg is poured into prepared baking dish. Casserole is sprinkled with chopped pecans and baked in to oven.

Ingredients -
3 cups Mashed, Cooked Butternut Squash, drained
1/2 cup White Sugar
1/4 cup Butter, melted
1 (8 ounces) can Crushed Pineapple, retain juice
1 teaspoon Ground Cinnamon
1 teaspoon Vanilla Extract
1/8 teaspoon Ground Nutmeg
1/3 cup Pecans, chopped
 
Preparation:

1. Preheat the oven to 325 degrees.

2. Apply butter to a 2-quart casserole dish and set aside.

3. Add together the sugars, butter, squash, cinnamon, pineapple, vanilla and nutmeg.

4. Thoroughly mix and pour into the prepared casserole dish.

5. Sprinkle the casserole with the chopped pecans and bake for 40-45 minutes.

1 medium squash equals 2-1/2 pounds. When peeled, deseeded and cut into 1 inch pieces yields 6 cups raw.
