Butternut Squash Supreme

Steamed and mashed butternut squash combined with eggs, shredded cheddar cheese, chopped yellow onion, whole milk, sea salt, and fresh ground black pepper. Mixture is spread evenly into prepared baking dish. Squash topped with butter flavored cracker crumbs and dots of butter. Casserole baked in hot oven.

Ingredients -
3 pounds Butternut Squash, peeled and cubed
2 Eggs, beaten
1 cup Shredded Cheddar Cheese
1 Medium Yellow Onion, chopped
3/4 cup Whole Milk
1 teaspoon Sea Salt
1/4 teaspoon Fresh Ground Black Pepper
1/2 cup Butter-Flavored Crackers, crushed
2 tablespoons Butter
 
Preparation:

1. Place the butternut squash in a saucepan and cover with water.

2. Bring to a boil.

3. Reduce the heat and cover and simmer for 15-20 minutes or until they are very tender.

4. Drain well and place in a large bowl.

5. Mash with a potato masher.

6. Combine the eggs, cheese, onion, milk, salt and pepper in a medium bowl.

7. Add to the mashed squash and mix well.

8. Transfer to a greased 2-qt. baking dish.

9. Sprinkle with the butter flavored cracker crumbs.

10. Dot with butter.

11. Bake uncovered at 350 degrees for 40-45 minutes or until a knife comes out clean.
