Curried Butternut Squash with Orange and Cumin

Chopped yellow onion, minced garlic, diced apple, diced butternut squash, chicken stock, curry powder, ground cumin, fresh orange juice, fresh orange zest, coarse salt, fresh ground black pepper, ground cinnamon and ground nutmeg are sautéed until apples are soft. Mixture is pureed and served hot.

Ingredients -
1 Yellow Onion, chopped
2 Garlic Cloves, minced
2 Granny Smith Apples, diced
3 Butternut Squash, peeled and diced
10 cups Chicken Stock
1 tablespoon Curry Powder
1/2 tablespoon Cumin
Juice of 1 Fresh Orange
Zest of 1 Fresh Orange
Salt, White Pepper, Cinnamon and Nutmeg to taste
 
Preparation:

1. In a medium saucepan, sauté the onions, garlic, apples, squash, chicken stock, curry powder, cumin, orange juice, orange zest, salt, pepper, cinnamon and nutmeg.

2. Bring the mixture to a boil.

3. Simmer until the apples are soft.

4. Add all the ingredients to a food processor.

5. Puree until smooth and adjust the seasonings.
