Harvest Squash and Apple Bake

Squash halves arranged in baking dish and topped with apple slices and mixture of brown sugar, melted butter, all-purpose flour, coarse salt, and pumpkin pie spice. Dish is covered and baked in hot oven until squash is fork tender.

Ingredients -
1 (2 pound) Butternut Squash
1/2 cup Brown Sugar, packed
1/4 cup Butter, melted
1 tablespoon All-Purpose Flour
1 teaspoon Coarse Salt
1/2 teaspoon Pumpkin Pie Spice
2 Baking Apples, peeled, cored (cut into 1/2 inch slices)
 
Preparation:

1. Preheat the oven to 350 degrees.

2. Wash each squash and cut in half.

3. Remove the fibers and seeds.

4. Cut each half into 1/2 inch slices.

5. In a medium bowl, stir together the brown sugar, butter, flour, salt and pumpkin pie spice.

6. Arrange the squash in an ungreased 11-1/2 x 7-1/2 x 1-1/2-inch baking dish.

7. Place the apple slices on top of the arranged squash slices.

8. Spread the sugar mixture over the top.

9. Cover the dish with heavy-duty aluminum foil.

10. Bake in a 350 degree oven for 50 to 60 minutes, or until the squash is fork tender.

Generally a blend of ginger, nutmeg, cinnamon and cloves, pumpkin pie spice can be found in most supermarkets with the other spices.
