1. Preheat the oven to 350 degrees.
2. Grease a shallow baking dish with nonstick cooking spray.
3. Place each squash half; cut side down in the prepared dish.
4. Bake for 40-60 minutes or until the squash is fork tender.
5. Meanwhile, remove the Italian sausage from its casing and sauté until it becomes brown and crumbly.
6. Add the chopped onion and garlic and continue sautéing until onions are translucent.
7. Stir in the beaten egg, parsley and cubes of bread.
8. Remove the mixture from the heat.
9. Scoop the seeds out from the squash.
10. Remove the squash pulp and add it to the sausage mixture.
11. Mix well and spoon the mixture back into the squash shell.
12. Return to the oven and bake for another 15 minutes until the top is golden brown. |
