Sausage Stuffed Butternut Squash

Italian sausage is sautéed with chopped yellow onion and minced garlic. Beaten egg, chopped fresh parsley, and wheat bread cubes are stirred in. Squash flesh is combined with Italian sausage mixture. Meat and vegetable mixture is spooned into squash shell and baked until mixture is golden brown.

Ingredients -
1 Butternut Squash, cut in half lengthwise
1/2 pound Sweet Italian Sausage
3 Wheat Bread Slices, cubed
1 Egg, well beaten
1 Small Yellow Onion, chopped
1 Garlic Clove, minced
1/4 cups Fresh Parsley, chopped
 
Preparation:

1. Preheat the oven to 350 degrees.

2. Grease a shallow baking dish with nonstick cooking spray.

3. Place each squash half; cut side down in the prepared dish.

4. Bake for 40-60 minutes or until the squash is fork tender.

5. Meanwhile, remove the Italian sausage from its casing and sauté until it becomes brown and crumbly.

6. Add the chopped onion and garlic and continue sautéing until onions are translucent.

7. Stir in the beaten egg, parsley and cubes of bread.

8. Remove the mixture from the heat.

9. Scoop the seeds out from the squash.

10. Remove the squash pulp and add it to the sausage mixture.

11. Mix well and spoon the mixture back into the squash shell.

12. Return to the oven and bake for another 15 minutes until the top is golden brown.
